Crispy Almond Bread

This almond bread is a light, sweet, guilt free snack (no butter!), perfect with a cup of tea or coupled with ice-cream for a tasty dessert! It is similar to biscotti, only cut thinner and cooked for longer. And if almonds aren't you favourite nut don't worry, this recipe is also great using other nuts or nut combinations.

Preparation Time: 10 minutes
Cooking Time: 1 hour 20 minutes
Makes: 40 pieces

Ingredients
250 grams roasted almonds
1/2 cup castor sugar
1 cup plain flour
3 egg whites



Method
Preheat oven to 180 degrees.

Beat egg whites with an electric mixer until soft peaks form.





Gradually beat in sugar, this should turn the egg mix glossy.



Gently fold in flour.



Stir in almonds.



Transfer mix to a lined bar tin and bake for 35 - 40 mins or until lightly golden on top.



Remove bread from tin and stand on a wire wrack until cool.



Lower oven temperature to 120 degrees.

Cut bread into wafer thin slices with a serrated knife and place on oven trays.






Bake for 40 mins or until dry and crisp. Cool on a wire wrack.



Enjoy!




Note: If stored in air-tight containers, these biscuits can be stored for up to 3 months!
