Crispy Baked Parmesan Polenta Chips

Baked Polenta is a delicious side dish and easy to make. Try making this polenta chips for a healthier sides.



Preparation Time: 5 minutes
Cooking Time: 15 minutes
Makes: 2 servings

Ingredients
1/2 cup polenta
2 cups fresh milk
a pinch of salt
1 tablespoon butter
1 tablespoon grated parmesan cheese
1 tablespoon olive oil

Method
Line a small loaf pan with baking paper, allowing the sides to overhang.

In a saucepan, bring milk to the boil.



Gradually pour in the polenta while whisking constantly until combined. Turn the heat down, continue whisking until the mixture thickens and creamy.



Remove from the heat, stir in the butter and parmesan cheese.



Pour into the prepared pan and smooth the surface. Leave aside to cool for 30 minutes. Cover with cling wrap and place in the fridge for 4 hours.



Preheat oven to 200C. Line the roasting pan with baking paper. Cut the polenta into sticks. Place in the pan, drizzle with olive oil and bake in the oven for 20 minutes until puffed and golden. Serve.
