Crispy Noodles with Sweet n Sour Sauce

Crispy noddles in sweet n sour sauce

It's the weekend and I'm really not in the mood to stand in the kitchen all day cooking. However my tastebuds are craving something tasty,spicy and filling. Thin crispy noodles in irresistible sweet n sour sauce seems to be just what my tastebuds need, without spending much time in the kitchen.

Preparation Time: 15 minutes
Cooking Time: 10 minutes
Makes: 4 servings

1 packet of ready crispy fried noodles.

For the sauce:
1 cup of sliced mixed vegetables like-broccoli,carrot,cabbage,capsicum and celery.
2 tbsp chopped garlic
2 tbsp chopped ginger
2 tbsp chopped chilli (optional)
1/2 cup white vinegar
1/2 cup brown sugar
2 tbsp dark soy sauce
2 tbsp light soy sauce
2-3 cups water
2 tbsp cornflour
2 tbsp black pepper powder
sesame oil for cooking
salt if needed.

Mix all the ingredients for the sauce except for the sliced vegetables,garlic,ginger and oil.

Heat sesame oil in a wok or a non-stick pan.

Add the garlic,ginger and chillies.

Stir for a minute

Add the sliced vegetables and stir again for a minute.

Add the mixture for the sauce and boil for a minute or two till the sauce is a little thick but not too thick.

Taste test.

You can even add a bit of tomato sauce to give a reddish colour.

Pour immediately over the crispy noodles and enjoy.
