Crumbed pork chops

Baked sweet potato enhances the flavour
Place fennel into the bowl, toss in oil, salt, pepper and set aside.
Meanwhile, put the breadcrumbs, parsley, fennel seeds into a bowl. Season with salt and pepper and stir to combine.
Place the eggs and breadcrumbs in two separate bowls side by side.
Dip the pork into the egg and roll in the breadcrumb mixture to evenly coat.
Coat the pork in breadcrumbs
Transfer the pork onto a plate, cover and refrigerate to rest until the sweet potato has been cooking for 20 minutes.
Heat a frypan on medium-high heat without oil.
Place the pork on the frying pan with 1 tbsp oil and cook for 4 minutes. Turn over and cook for 2 minutes, transfer to a plate and rest for 2 minutes.
The pork will continue to cook while resting
Take the sweet potato out of the oven, transfer to a bowl and add the garlic, milk and butter. Mash until smooth.
Spread the fennel on a tray and bake for 8 minutes until brown.
