If you are out of ideas for a good salad why not get inspired by some delicious Asian flavors. This salad is a show stopper and your guests and your family will know it. I got this recipe from a family friend and the secret to its tastiness is in the dressing as well as in the fresh ingredients. I like to use whole almonds which I break up which gives it a home-made look and flavor. The dressing is fantastic and when mixed with a good quality extra virgin oil, it is amazing.
I used red shallots from the garden but you can also use green shallots or even red onion (but the green shallot tops look great in the salad and add to the texture). You can buy the crunchy Asian noodles in any supermarket and they are a great addition to this salad as they add the crunch along with the almonds.
Serve this salad up with your favourite meat, fish or even as a lunch meal. This salad is so easy to make that you are guaranteed to make it again and again.
Ingredients Half a medium cabbage
2 or 3 spring onions (red shallots or green shallots)
1 pack of Fried Asian Noodles.
1/4 of extra virgin olive oil
1/3 of Fried Noodle salad dressing
150g of almonds
Slice cabbage up finely (you can also use Chinese Cabbage 'Wombok' which would make the salad a lot more softer in texture. I use green cabbage for the crunch.
In a zip lock bag prepare your almonds and bash them down with a rolling pin. They should be roughly 'chopped' but uneven in size. This will add crunch to the salad.
Place the red shallots, cabbage and almonds into a bowl.
Make up 1/4 of the Fried Noodle salad dressing mixed with 1/3 of extra virgin olive oil and shake up so it is combined.
Pour the dressing over the salad and combine until all the ingredients are coated.
