1/2 large wombok (Chinese cabbage)
1 cup of red capsicum, sliced
1/2 cup of red onion, sliced
1 cup of carrot, grated
1/2 cup of peanuts
1/2 packet of crunchy noodles
1/2 cup of celery, sliced
1/2 bunch of coriander, torn
1/4 cup of oil
1/2 tsp of chilli
3 tbs soy sauce
3 tbs lime juice
1 tbs brown sugar
1/2 tsp garlic
Slice the wombok, capsicum, onion and celery and combine in a large bowl.
Grate the carrot and tear up the coriander. Add to the bowl.
Break up the noodles and add those and the peanuts to the mix.
In another bowl combine the oil, soy sauce, lime juice, sugar, garlic and chilli. Whisk together and taste.
Serve the salad and drizzle the dressing over the top.
Use kecap manis to sweeten this dish further.
If you are making this recipes for lunches, dress as you go to keep the salad from going soggy.
