These biscuits are scrumptious. Not only do they taste delicious, but they are also nutritious. The crunchy goodness of macadamias and oats, combined with the fresh taste of coconut and sweetness of golden syrup, makes them simply irresistible. The whole family will love them. Ingredients 1 cup plain flour, sifted
3/4 cup rolled oats
2/3 cup desiccated coconut
1/2 cup sugar
1/3 cup macadamias, chopped
2 tbsp golden syrup
125 gm unsalted butter
1/2 tsp bicarb soda
These biscuits have all the favourites in them.
Preheat your oven to 170 degrees Celsius.
Place the flour, oats, coconut, sugar and macadamias in a bowl and mix until all the ingredients are well combined. Form a well in the centre of mixture and leave to the side.
Melt the butter in a saucepan, over a low heat. Stir in the golden syrup.
In a small dish, mix 1 tablespoon of hot water with the bicarb soda.
Pour the bicarb soda into the saucepan with the melted butter and golden syrup. Stir briefly to combine. It will bubble up a bit at this stage.
Pour the mixture into the bowl with the dry ingredients and mix well.
Pack portions of the biscuit mixture into a tablespoon and pat out onto a well-greased baking tray, leaving a bit of space between the biscuits. Bake them for about 10 minutes or until they are a golden colour. Allow the biscuits to cool on a wire rack. Enjoy.
