Curried Parsnip and Sweet Potato Soup

Easy, tasty and cheap recipe for any day of the week.

Preparation Time: 5 mins
Cooking Time: 45 - 60 mins
Makes: 4 - 5 servings (depending on how much you eat!)

Ingredients:
3 parsnips
1 brown onion
1/2 sweet potato
2 gloves garlic
2 tablespoons honey
1 tablespoon curry powder
1 teaspoon thyme
1.5L chicken stock
250mL light cream
Salt and Pepper to taste.

Method

Chop onion, garlic, parsnips and sweet potato into small chunks. Place in a large saucepan with stock.

Bring to the boil and add honey, thyme, curry powder, salt and pepper. Simmer until parsnip and sweet potato is soft.

Using a potato masher or handheld blender, mash/blend until soup is a desirable consistency ( I like my soup chunky so I use the potato masher, but if you like a smoother soup, use the blender.)

Stir in cream and serve with bread.
