Custard Filled Chocolate Eclairs

Make these cute cafe style pastries in the comfort of your own home. They can be a bit tricky sometimes, but practice makes perfect and even if they come out looking a bit wonky, they still taste great.

Preparation Time: 1 hour
Cooking Time: 1 hour
Makes: 16 servings


To make the choux pastry

1/2 teaspoon salt
1 1/2 teaspoons caster sugar
125 g plain flour
60g butter
150ml water
3 eggs

To fill and top

4 cups of custard
200g dark chocolate, melted


In a bowl, combine the sugar, flour and salt. Set this aside.

In a saucepan on medium heat, combine the butter and water. Bring this to the boil slowly, stirring to melt the butter along the way.

Remove the saucepan from the heat and quickly add the flour mixture. Stir rapidly with a wooden spoon to combine.

Return the pan to the heat. Stir vigorously for another minute.

Transfer the mixture to a mixing bowl. Leave the mixture to stand for 5 minutes.

Beat in the eggs, one at a time, until the mixture is glossy. It will fall heavily from the beaters when you know it is done. You might not need all the eggs.

Preheat the oven to 200 C. Line some baking trays with baking paper, sprayed with canola spray.

Pipe the mixture in 8-10cm lengths onto the baking trays.

Sprinkle some water on each tray. This will produce steam and encourage the pastries to puff.

Bake for 12-15 minutes. Lower the heat to 180 C, then bake for another 10-15 minutes, or until golden.

Transfer the pastries to a wire rack. Use a sharp knife to slice each in half.

Fill one of each half with custard.

Place the second half on top.

Top each with melted chocolate.

Allow the eclairs to set in the refrigerator.

Did you just use regular custard?
One of my all time favourite treats but I've never attempted to make the before. I think I need to give these a go.
