Custard Melting Moments

These Melting Moments are deliciously sweet and look fantastic. Perfect for morning or afternoon tea.

Preparation Time: 40 minutes, plus cooling time
Cooking Time: 10-12 minutes
Makes: approximately 18 filled biscuits


185 g butter, softened
1/2 cup icing sugar
1 1/2 cups plain flour, sifted
1/2 cup custard powder

100 g butter
1 tsp vanilla essence
3/4 cup icing sugar, sifted
2 tbsp custard powder


Preheat oven to 180 degrees C.
Beat butter and icing sugar in a medium bowl with an electric mixer until light and fluffy. Gradually beat in sifted flour and custard powder.
Turn dough out onto a clean surface and knead until smooth. Wrap in cling film and place in refrigerator for 20 mins.
Roll out dough to 5mm thick and cut into shapes (make sure there is at least two of each shape). Place shapes on lined trays, marking each with a fork.
Bake for 10-12 mins until golden around the edges. Cool on trays.

Beat butter and vanilla essence in a small bowl with an electric mixer until light and fuffy. Gradually beat in custard powder and icing sugar until smooth and creamy.
Transfer filling into a piping bag and pipe onto the centre of half the cooled biscuits, ensuring even coverage.
Top filled biscuits with the remaining biscuits, pressing slightly. Dust with icing sugar.
