Ingredients 4 tbsp shredded coconut
40 g dark chocolate, 70%
3 tsp coconut oil
2½ tsp cranberries
Put the dark chocolate and coconut oil in a microwave safe bowl and heat for about 2 minutes, stopping and stirring every 30 seconds. It may take a bit longer, depending on your microwave, but cook till chocolate melted.
Add the coconut and cranberries, and stir well.
Put some baking paper on a tray, and spoon about a tsp or a bit more of the mixture onto the tray until it is all done.
Put the tray into the fridge for about 2 hours or until set.
