Dark Chocolate Easter Eggs

These gorgeous little chocolates are so delicious and vegan approved.



Preparation Time: 10 minutes
Cooking Time: refrigerate for an hour
Makes: 12

Ingredients
180g dark chocolate sweetened with stevia
20g pistachios
35g almonds
15g shredded coconut
30g goji berries
20g sultanas
2 tablespoons coconut or macadamia oil (whichever you prefer)
Little Easter egg or cake molds

Method
Melt the chocolate in a pan or in the microwave.
Lay a thin layer of the chocolate over the molds.
In a blender (or your magic bullet), blend the almonds until they are in little pieces.
Mix in the oil and remainder of the melted chocolate
Add the remainder of the ingredients and blend until slightly smooth.
Fill the molds full with the mixture.
Leave in the fridge for an hour.
