Decadent Chocolate Baked Cheesecake

A rich, deeply chocolatey baked cheesecake, rich, moist and satisfying.

Preparation Time: 40 minutes
Cooking Time: 60 minutes plus 120 minutes cooling off
Makes: 12 servings

Ingredients

Base:
250g Chocolate biscuits
1/2 Teaspoon ground cinnamon
150g Butter, melted

Filling:
250g Peppermint cream filled dark chocolate
3/4 Cup caster sugar
3 Eggs
750g Philadelphia cream cheese (3 x 250g packets)
2 Tablespoons dark cocoa powder
1 Teaspoon Vanilla extract
600g Sour cream

Method
Preheat oven to 160C
Base
Put the roughly broken biscuits and cinnamon into a blender and grind finely.
Pour melted butter into the biscuit mix and combine well.

Pour mix into a greased 24cm springform cake tin and press down well with a smooth sided glass.

Chill in refrigerator.

Filling
Melt chocolate and a slug of cream in a double-boiler.

Using an electric mixer whisk together sugar and eggs until light and creamy.
Add softened cream cheese, cream, sour cream, melted chocolate, cocoa powder and vanilla to eggs mix and combine with a steel spoon until smoothly combined.

Pour into chilled base and bake for 60 minutes or until the centre shows a slight wobble when gently shaken.

Turn off oven.
Leave in the oven with door ajar for two hours, to prevent cracking.
Chill in refrigerator for a further two hours and dust with cocoa powder before serving.

Hi Douglas
This recipe sounds delicious. How much cream do you need? It's mentioned in the recipe but I can only see cream cheese or sour cream in the ingredients - no plain cream.
It is pretty delicious. I use about a cup of cream, just enough to help melt the chocolate and the rest in the mix. Say 250mls. It is entirely optional though, and can be omitted.
