This dish has lovely fresh flavours and deliciously smooth textures. I usually pair it with eggs for breakfast but it can be enjoyed as a side at any meal time.

Makes: 2 servings

Simple Start.
Ingredients
1 avocado
2 tomatoes
1/2 lime
1 chilli
1/2 bunch of coriander
Salt
Method
Peal, de-seed and dice the ripe avocado, add to a bowl.
Dice or cut the tomato into strips, add to the bowl.
Pick the coriander leaves, add to the bowl.

You want Chunky Pieces.
Squeeze the lime into the bowl.
Cut the chilli into small pieces, add to the bowl.

Zesty Lime.
Add a dash of salt and combine using your hands.

Carefully Mix with your Hand.
For breakfast I eat this on toast with poached eggs, for lunch its lovely as a salad with some goats cheese and for dinner its perfect alongside nachos or tacos.
