Deluxe Vegetable Sushi

For many years, the only sushi variety I would eat was avocado, sometimes with tofu. This was mainly because of the lack of vegan options at sushi takeaways. Eventually I learnt how to roll my own sushi and became more adventurous with my sushi fillings.

To roll sushi, you will need a special bamboo mat, however these usually only cost a few dollars (the same cost as a roll of sushi from a sushi train) and are commonly available at most supermarkets. In a pinch, you could also use a clean teatowel.



Deluxe vegetable sushi


Preparation Time: 15 minutes
Cooking Time: 0 minutes
Makes: 5 servings

Ingredients
5 sheets nori paper
2 cups cooked brown rice, cooled
1 small carrot
100g tofu
1/2 avocado
1/2 cup baby spinach
1/2 cup sundried tomatoes
1/2 cup snow peas
Soy sauce, to serve

Method
Prepare your fillings - grate the carrot, slice the tofu, avocado, spinach and sundried tomatoes into strips, top and tail the snow peas.

Place the nori, shiny side down, on the mat. Leaving an inch from the bottom, spread out a few tablespoons of rice.

Top the rice with some of the toppings, but be careful not to put too much on, as it will make the sushi difficult to roll.

Use the mat to roll the sushi firmly, stopping about 1 inch from the top.

Brush some water on the 1 inch of nori at the top.

Roll the nori over the sushi and press down gently for a few seconds to seal.

Repeat the process until all ingredients are used.
Slice the sushi rolls into quarters with a sharp knife (wetting the knife can help slice through the nori).
Serve immediately or store in the fridge for up to 24 hours. Serve with soy sauce as desired.
