Ingredients 3 Large potatoes (peeled & cut into cubes)
2 red onions (chopped)
Chilli flakes (1-2 tesps or more according to the hotness you desire)
1/4 teaspoon turmeric
1/4 inch stick of cinnamon
3 tablespoons oil
Boil Potatoes till tender. Drain and keep aside. (Boiling in the microwave saves time)
Heat oil in a frying pan. Add the onions, cardamoms, cinnamon stick, curry leaves, cloves and chilli flakes. Leave till aromatic and the onions are tender.
Add the potatoes, turmeric and salt to taste. Mix gently taking care not to mash the potatoes. Leave on the stove for few more minutes. Serve with rice, roti or bread.
