Devil's Food Cake

This recipe creates a lot of cake-batter, so next time I make it, I think it would be better to halve the mixture over two loaf tins and make two cakes instead of one really big cake.

Preparation Time: 20 minutes
Cooking Time: 45-60 minutes
Serves: 12

Ingredients:
2 cups self-raising flour
cup (90 g) cocoa powder
1 teaspoon of bicarbonate of soda
1 cups caster sugar
160 g of butter
2 teaspoons of vanilla extract
3 eggs, beaten

Chocolate Ganache Icing:
cup (185 ml) of thickened cream
200 g of dark chocolate

Method
Preheat the oven to 180 degrees Celsius. Grease and line a 22 cm round, or an oblong cake-tin with baking paper
Sift flour, cocoa powder and bicarbonate of soda into a large bowl. Stir in the sugar until well combined
Combine the butter, vanilla and 1 cup of water in a saucepan over medium heat.
Stir until the butter is completely melted, then add into the flour mixture and whisk until well combined. Add the eggs and whisk until combined

Spoon the mixture into the cake tin and smooth the top. Bake for 45-60 minutes or until cake-skewer comes out clean. Remove cake from oven and leave in the tin to cool for 5 minutes

Icing Heat the cream in a small saucepan over medium-low heat. When bubbles are beginning to form around the edge of the saucepan, remove from the heat and stir in chocolate until melted and smooth. Transfer to bowl and stand at room temperature
When cake is cold, spread the icing across the top of the cake and enjoy.
