This Dill Pesto is a twist on the classic Italian Basil Pesto. Lemon, olive oil, parmesan cheese and pine nuts team perfectly with the dill to create a refreshing and zesty sauce that can be combined with seafood, chicken, lamb, beef, pasta and can even be tossed through vegetables.

Preparation Time: 5 minutes
Ingredients 2 Cups of Fresh Dill
1/2 Cup of Lemon Juice
4 Tablespoons Grated Parmesan Cheese
4 Tablespoons Pine Nuts
1/2 Cup of Olive Oil
Salt and Black Pepper to taste
Parmesan Cheese to garnish
Combine all ingredients into a food processor.
Combine all ingredients.
Process until thoroughly blended.
Transfer to a small serving bowl.

Dill Pesto makes a great accompaniment to pasta. I drizzled some of this Dill Pesto over some Eggplant Ravioli and the result was purely sublime.
