Double Dipped Lamingtons (Gluten Free)

What is better than a lamington? A double chocolate dipped one! These are light, fluffy, moist, vanilla flavoured lamingtons double dipped in chocolate.

These store well and do not dry out.

These beauties are low FODMAP, gluten and lactose free.


Double dipped lamingtons
Light, fluffy, delicious and great for any celebration

Preparation Time: 5 minutes
Cooking Time: 35 minutes
Serves 24 lamingtons

Ingredients
3 eggs
1/2 cup caster sugar
1 tbsp vanilla essence
3/4 cup all purpose flour, gluten free
2 tsp baking powder 

Chocolate dip
1/2 cup cacao or cocoa powder
4 cups icing sugar
200 ml boiling water
2 cups desiccated coconut, to roll

Method
Preheat the oven to 180 degrees. Line a 20 cm x 30 cm lamington cake tin.
Beat the eggs and vanilla essence until the eggs have tripled in size, are pale and fluffy, 5 - 6 minutes.  
Add the sugar gradually and beat until dissolved.
Whisk the flour and baking powder together and fold into the egg mixture to combine.
Pour the batter into the cake tin.
Bake for 30 - 35 minutes, until the centre springs back when touched and the edge starts to come off the side of the tin.
Turn the cake out on a piece of baking paper on a wire rack to cool completely.
Cut into desired size. I cut 24 pieces.

Cool the cake completely and then cut to size

Mix the cacao in boiling water in a bowl until it dissolves.
Add the icing sugar and stir until the sugar dissolves.
Place the cut slices in the chocolate mixture and roll until covered and soak for 2 minutes. Roll in coconut and set aside.

Soak the lamingtons in chocolate to make them delicious and moist

Starting with the first lamingtons rolled, dip into the chocolate icing a second time and roll in coconut.

Serve immediately or place in the fridge until ready to serve.
