Gateau au Chocolat is simply chocolate cake in french, gateau meaning cake and chocolat...well, chocolate!
Following on from my previous Easy 3 Ingredients Souffle Cheesecake, I decided to give 2 ingredients a go. All you need in this easy recipe are eggs and your favourite chocolate. You will be amazed by how much flavour and how far two simple ingredients will get you!
Ingredients 3 eggs
165g chocolate, chopped (own preference, I used dark chocolate)
Preheat the oven to 170°C.
Grease and line the bottom and sides of a 10 centimetre diameter cake tin.
Separate the egg yolks and whites.
Melt chocolate over simmering water, stirring with a metal spoon.
Add the egg yolks into the melted chocolate.
Stir to combine and set aside.
Meanwhile beat the egg whites until firm peaks.
Fold a third of the meringue into the chocolate mixture using a spatula.
Fold in the remaining meringue portions at a time until all is used.
Pour the mixture into the prepared cake tin.
Drop the pan lightly to raise any air bubbles.
Bake for 30 minutes, turning the cake every 10 minutes so that it bakes evenly.
The cake should rise very tall when baking but will sink slightly when cooled.
Allow to cool for 5 minutes.
Serve warm and dust with icing sugar if preferred.
When the cake comes fresh out of the oven, it is moist and soft in texture. After cooling off for an hour or more, the chocolate ingredients will set and become a denser (but equally tasty) thick and rich cake.
