Easy 3 Ingredients Fruit Cake

This cake is both moist and delicious and requires only three ingredients, with no added sugar.

Make it all year round, as it lasts for months in the fridge, and is great with thickened cream over it!

Preparation Time: 10 minutes plus soaking overnight
Cooking Time: 60 minutes
Serves: 15 - 20

Ingredients
1 kg dried fruit
600 ml iced coffee
2 cups self raising flour

Method
Put the fruit and the milk in a large bowl, cover and put in the fridge overnight.

The fruit will soak in the liquid.

Preheat the oven to 160/140 fan forced.

Add the flour, and stir so it is well combined.

Line or grease a 22 cm or thereabouts, cake tin, and bake for about one hour or slightly more.

Test to see if it is done by piercing with a sharp object - if it comes out clean, it is done, though better a bit underdone than overdone.

Slice, and serve - can be heated slightly in microwave, and keeps for months.
