Easy 3 Ingredients Soufflé Cheesecake

A soufflé is typically a lightly baked cake made with egg yolks and beaten egg whites served as a savoury or sweetened dish.

The word soufflé is the past participle of souffler meaning 'to puff up' or 'blow up'. This is exactly what makes this soufflé cheesecake so light and fluffy. This recipe is made of three simple ingredients and is an easy to do recipe for any occasion.



Preparation Time: 10 minutes
Cooking Time: 20 minutes 10 minutes resting
Makes: 2 servings

Ingredients
2 eggs
80g white chocolate
80g cream cheese



Method
Preheat the oven to 170°C.
Grease and line the bottom and sides of a 10 centimetre diameter cake tin.
Separate the egg whites and yolk.


Melt the white chocolate in a large bowl over simmering water.


When the chocolate has been melted, add in the cream cheese and melt together.
Stir to combine.


Remove the bowl from the water and add in the egg yolks.
Combine well with a metal spoon.


Beat the egg whites until firm peaks.


Add in half the meringue into the cream cheese batter and fold to combine.
Add in the remaining half and fold.
Pour the mixture into the prepared cake tin.
Drop the pan lightly to raise any air bubbles.


Place the cake tin into a baking pan and into the oven.
Pour boiling water into the baking pan.



Bake for 10 minutes at 170°C.
Reduce the temperature to 160°C and bake for a further 10 minutes.
Stop the heat and allow the cake to cool in the oven for a further 10 minutes.


Dust with icing sugar and almond flakes if desired.
