Almond Cookies Greek Amightalota
These Greek almond biscuits are moreish, easy to make and make a great Easter or Christmas gift


Four ingredients, quick and moreish. These Greek almond biscuits are delicious and easy to make. They are show stoppers, great for afternoon tea, and are fantastic as Easter or Christmas gifts. These beauties are also lactose and gluten free so no one misses out. Serve alone or with a cup of tea or Greek coffee. Enjoy.

Preparation Time: 5 minutes
Cooking Time: 15 minutes
Serves: 12-14 biscuits

Ingredients
1 cup almond meal
1/4 cup caster sugar
1 egg white
1/4 cup flaked almonds (for rolling)

Method
Preheat the oven to 180 degrees. Line a baking tray with baking paper.
Lightly beat the egg white and set aside.

Put the almond meal and sugar in a bowl, stir to combine. Make a well in the centre, add the egg white and stir until a dough is formed.

Take tablespoon sized pieces of the dough and roll into 6-7cm logs.
Roll the logs in the flaked almonds, shape into crescents and place on a baking tray.

Bake for 12 - 15 minutes or until slightly golden. Cool on wire racks.
Serve and enjoy.
