Apple Crumble
Warm apple crumble and cream


Easy and delicious, this apple crumble is comfort food at its best. The gooey apple filling is moorish and the cinnamon and nutmeg help to make a tasty topping. It is perfect if you are craving an apple pie and do not have the time or energy to make the pastry but need a warm apple fix. Served best warm alone or with cream, custard or icecream. Enjoy.

Preparation Time: 15 minutes
Cooking Time: 50 minutes
Serves: 4

Ingredients

For the apple filling
8 large green apples, pealed, cored and diced into 2-3cm cubes
1 lemon, zested and juiced
2 tsp cinnamon
3/4 cup raw or caster sugar

For the crumble topping
1 cup rolled oats
1/2 cup flour
75g butter (or nuttlelex if lactose free)
1 tsp cinnamon
1/8 tsp nutmeg
1/2 cup brown sugar

To serve
Cream, custard or vanilla icecream

Method
Preheat the oven to 180 degrees.
Put the apple, lemon juice, 1/2 of the lemon zest, sugar and cinnamon into a baking dish. Stir to combine. Set aside for 5 minutes for the sugar, lemon and cinnamon to form a syrup like fluid.

In the meantime, while the lemon and cinnamon syrup is forming, place the rolled oats, flour, butter, cinnamon and brown sugar into a bowl.

Use your fingers to combine the dry ingredients until the mixture has a crumbly, breadcrumb like consistency.
Stir to coat the apples in the syrup and evenly spread the apple filling in the baking dish.
Gently sprinkle the crumble topping over the entire apple surface.
Bake for 45-50 minutes, until the crumble is golden brown and the apple is cooked through.
Serve with cream, custard or icecream.

Tips
For a extra hint of spice add 1/2 tsp ground ginger to the crumble topping.
For a healthier version add 1/2 lemon zest, 2 tbsp lemon juice, 1 tsp cinnamon and 1/3 cup of sugar or stevia to the apple filling.
Add raspberries or rubarb for a tart contrast to the apples.
