Easy Apricot Custard Tarts

A warm, fruity and creamy tart to devour on a chilly winter's night.



Preparation Time: 10 minutes
Cooking Time: 15 minutes
Makes: 4 servings

Ingredients
450g can apricot halves
2 sheets reduced-fat puff pastry, partially thawed
1/3 cup custard
1 egg white
1 tablespoon raw sugar

Method
Preheat the oven to 200 degrees C. Lightly grease 4 ceramic ramekins.

Slice the pastry sheets in half. Line each ramekin with one half each sheet. Bake these for 5-10 minutes, or until light golden brown and puffy.



While waiting, drain the apricot halves. Remove any excess liquid by further draining the apricots on paper towel.

When ready, carefully remove the ramekins from the oven.

Fill each ramekin half way with custard.



Top each with apricots.



Sprinkle sugar over the apricots. Coat the visible pastry shell with a brush of egg white.



Bake for a further 5-10 minutes.

Serve immediately, with a dollop of ice cream or whipped cream on top.
