Easy Australian Dahl

I've called this warming and hearty dish Australian Dahl as it is my take on the classic Indian dish, and I'm Australian. I have swapped the stock for tomatoes, the coriander for parsley and halved the cooking time by swapping dried lentils for tinned. It's way faster and we Aussies are cheeky like that.



Enjoy alongside a vegetarian curry, with rice or with naan bread.

Preparation Time: 5 minutes
Cooking Time: 15 minutes
Makes: 4 sides

Ingredients
1 tbsp water or oil
400 grams lentils
1 tbsp ground cumin
1 tbsp ground turmeric
1 tbsp garam masala
1 tsp chilli powder
1 fresh red chilli
1 purple onion
2 garlic cloves
1 tbsp grated fresh ginger
⅓ cup chopped parsley
400 grams tomatoes

Method
Heat the oil or water in a pan over high heat.

Add the cumin, turmeric, garam masala, chilli powder, red chilli, onion, garlic and ginger, stir until the onion softens and the sauce becomes fragrant.



Add the parsley, tomatoes and lentils, once bubbling reduce the heat to a simmer and allow the sauce to thicken.



Once the dahl is thick (about 10 minutes) taste and season as needed.

Serve with a final sprinkling of parsley and enjoy alongside rice or curry.
