This recipe is ridiculously easy, quick and delicious. It's perfect on pasta, used as a sauce for pizza, baked in cheese bread. I could go on but instead I'll just tell you how it's done and let you decide for yourself.
Preparation Time: 5 minutes
Cooking Time: 5 minutes (to toast pine nuts)
Makes: Depends on what it's used for but easily serves four if used as pasta sauce.
Ingredients 50g pine nuts
150ml olive oil
2 garlic cloves (or garlic from a jar, both work well)
Toast pine nuts in a small fry pan over low heat until slightly browned.
Wash basil (I find draining it in a colander is the easiest way to get as much water off as possible).
Place basil, cooked pine nuts, parmesan, garlic and olive oil in food processor and process until smooth.
Season with salt and pepper to taste.
TIP: If you, like me, don't want to have to get out the big food processor, a smoothie processor / mini blender works just as well. Simply add half of all the ingredients, process, then remove the pesto and do the same with the other half of all the ingredients. Combine in a bowl before serving.
Serve as desired. If serving with pasta, stir through pasta and heat on the stove top and serve with fresh cherry tomatoes to break up the flavour.
