This quick and easy berry icecream combines frozen banana, strawberry and blueberries to make a healthy delicious summer dessert. This tasty snack is lactose and gluten free and is a great for those on a low FODMAP eating plan. Blend the ingredients and eat straight away or freeze in an airtight container or in icy pole moulds for later. The kids will love the berry icecream or icy poles as a healthy afternoon tea snack.

Cooking Time: 10 minutes if eating immediately or 4 hours freezing or until set for icy poles
Ingredients 2 frozen ripe bananas
350g frozen strawberries halved
250g frozen blueberries
1/2 cup lactose free milk OR almond milk OR coconut milk OR ice cubes
Break the banana into chucks add lactose free milk (or alternative ingredient) and purée until just smooth with a stick blender or blender.
Break the banana into chunks for quicker blending time to reduce defrosting time
Add 250g strawberries and blend.
Add the frozen strawberries and blend
Add the blueberries and blend. Taste and add the remaining 100g strawberries until the desired sweetness is reached.
Serve and eat immediately or pour into a airtight container or in icy pole moulds and freeze for 4 hours or until set.
Icy pole moulds are available at most supermarkets, discount and kitchenware shops.
Ripen bananas on the bench top to intensify flavour and remove skin prior to freezing.
Serve with crushed nuts or toasted muesli for a crunchy alternative.
