Easy Cheesy Mini Fish Pies

Fish pie, easy, cheese, kids


Having your own personal pie is a little more special but this recipe can just as easily be prepared as one large dish. The recipe makes four adult starters or four kids portions. The lightly cheesy sauce and tender pieces of fish are just perfect with the smooth mashed potato on top and it's tasty enough for the whole family to enjoy.

Preparation Time: 30 minutes
Cooking Time: 20 minutes
Makes: 4 servings

Ingredients
450g potatoes
30g butter
1/4 large white onion finely diced
30g plain flour
1 1/2 tsp rice wine vinegar
300ml milk
15g grated parmesan
15g grated pecorino
15g cheddar cheese
1/2 tsp lemon juice
120g skinless & boneless salmon fillet
100g skinless & boneless cod (or other firm white fish)
25g cooked peas
25g cooked sweetcorn
5 tbsp milk
Pinch paprika & a little extra parmesan for the top

Method
Preheat oven to 190c.
Cube and boil the potatoes until soft and then mash.
Add 4 tablespoons of milk to the potato and mix until smooth.
In a separate pan, melt the butter and then gently fry the onion until soft.
Add the rice wine vinegar and continue to cook until you can no longer smell the strong vinegar fumes.

Add in the flour and cook gently to form a roux.
Gradually add in the milk and keep stiring until you have a smooth sauce.
Continue to stir until the sauce thickens.
Remove the sauce from the heat and add in the lemon juice and cheese, mixing until it has all melted.
Cube the fish to bite size pieces and add to the sauce along with the peas and sweetcorn.
Give it all a good mix so that everything is evenly distributed and then divide into four individual ramekins.

Spoon over the mashed potato and then use a fork to create lines.

Add a dash of paprika to the top and grate a little parmesan over and then pop in the oven for 20 minutes.
