Easy Lemon Meringue Pie

A lemon meringue pie makes a delicious dessert the entire family will enjoy. There are many different recipes for lemon meringue pies but this is the quickest and easiest one I know.

Preparation Time: 15 minutes
Cooking Time: 15 minutes
Serves: 12

Ingredients
250 g milk arrowroot biscuits, crushed
120 g butter, melted
395 g Condensed Milk
4 eggs, seperated
1 lemon, juiced
1/2 cup sugar

Method
Preheat oven to 180C.
Mix together the crushed biscuits and butter, then press the mixture into the base and on the sides of a 20-23cm springform pan. Place in the fridge while you prepare your filling.

To make the filling, whisk together the condensed milk, egg yolks and lemon juice. Pour the mixture into the prepared pan.

Using a mixer, beat the egg whites until soft peaks form. Gradually add in the sugar mixing well after each addition. Beat until the sugar is completely dissolved.

Spoon the meringue over the top of the filling. You can smooth the meringue or put little peaks into it.
Bake for 15 minutes or until golden.
Serve hot or cold.

Have you tried making your own condensed milk? I haven't tried this before but I have heard that you can use any soy/nut milk to make your own.
Soy milk is probably the easiest to access (where I live anyway). You could try combining 2 cups of soy milk with 150g of sugar (or agave syrup) in a saucepan over low/medium heat. Stir until the sugar has combined. Simmer for about 30- 40 minutes without stirring so the mixture doesn't crack. It'll have reduced to about 1 cup in volume and turned darker. Pour the milk into a clean jar/container and allow to cool before using. If you have any extra sugar that has crystallised around the edges of the saucepan try not to add them.
OR
if you can find any soy milk powder you could substitute it for the milk powder in my condensed milk recipe already (the link in this recipe). And sub the butter for a lactose free butter/oil that firms up when cool. I only know of coconut oil but you might know of something you can use in its place (or try it without).
