These miniature fairy cakes are super easy and super cute! Mixing all the ingredients together in one step and baking for only 10 minutes take barely any time to make and are the perfect bite sized sweet for any occasion! Decorate them with coloured sprinkles for a bit of colour or a fun fairy party for the kids!
Preparation Time: 15 minutes (batter preparation and decoration)
Cooking Time: 10 minutes
Makes: 40 mini cupcakes
Ingredients
125g butter, softened
1 tsp vanilla essence
3 eggs
1/4 cup milk
150g castor sugar
225g self raising flour
300mL whipped cream
1 Tbsp icing sugar (for dusting)
Method
Preheat oven to 160 degrees Celcius.
Place all ingredients into a medium mixing bowl and beat with an electric mixer until smooth.
Spoon batter into cupcake cases until 1/2 to 3/4 full.
Place in oven and bake for 10mins or until a skewer inserted in the centre comes out clean.
Cool cupcakes completely on a wire wrack.
Once cool cut a round well in the middle of each cupcake, keeping the piece that you cut out whole.
Cut the removed piece in half.
Fill the well of the cupcake with whipped cream and place the two halves of the removed cupcake piece on top with the flat section angled into the cream.
Dust with icing sugar and serve.
