Easy Peasy Chunky Guacamole

An easy, health dip or accompaniment that could become your summer favourite.

Preparation Time: 10 minutes
Makes: 1 bowl to share


Ingredients
2 large avocados
a couple of slices of red onion, diced
1/4 lemon
1/2 tomato, diced
1/4 red capsicum, diced
salt & pepper

Method
Cut the avocados in halves, scoop out the flesh into a bowl and mash with a fork.

Add the diced red onion, red capsicum and tomatoes to the mashed avocado, squeeze over the lemon juice and add a pinch of salt and a good crack of pepper.

Stir all ingredients together and voila - you have a tasty, chunky guacamole.

Garnish with spring onions or coriander and dip in your choice of corn chips.

An easy, healthy, homemade dip for summer or great to accompany your favourite Mexican dish.
