Potatoes and all kinds of onions have been known to compliment each other in many a dish for a long time. Here is a very simple and easy recipe for a spritzy and healthy summer style potato and spring onion salad.
1.5 - 2 kilograms of potatoes
3 large spring onions
1/2 white or purple onion
130 mL white wine vinegar
A pinch of salt and pepper
Slice some potatoes into bite-sized pieces. Bring a pot of water to the boil and add the potatoes. This process will take around 40 minutes depending on the size of the potatoes.You can either peel them before or after they have cooked.
Cut the spring onion and white or purple onion into small pieces and add with the vinegar into a suitable bowl.
Once the potatoes have finished cooking (this can be tested by poking them with a fork or knife; If it easily slips in and out again they are ready) add them to the bowl and sprinkle with some salt and pepper. Stir and serve. Bon appetit!
