Easy Seafood Laksa

This recipe makes a quick and easy seafood laksa.



Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes: 4 servings

Ingredients
150g rice vermicelli
150g hokkien noodle
1/4 cup laksa paste
3 cups vegetable stock
400ml coconut milk
750g prawns, de-veined, shelled
12 fish balls
100g tofu puffs, quartered
100g bean sprouts
salt, to taste

Method
Cook the vermicelli in a pot of boiling water for 2 minutes. Drain and set aside. Cook the hokkien noodle in a pot of boiling water for 2 minutes. Drain and set aside.
In a stockpot, add in the laksa paste and pour in the vegetable stock. Bring to the boil and turn to heat down to simmer. Pour in the coconut milk.
Add in the prawns, fish balls, tofu puffs and bean sprouts. Cook for 2 minutes.
Divide the vermicelli and noodles between 4 bowls. Ladle the prawns, fish balls, tofu puffs and bean sprout, and pour over the laksa soup.
