2 cups All Purpose flour (self raising wholemeal)
1/2 cup caster sugar (brown caster sugar) - optional for sweetness
3 teaspoons baking powder
1 cup of rice milk
1/2 cup applesauce (can use coconut milk)
1 cup blueberries
Pre-heat oven 180 degrees.
Mix all ingredients (minus blueberries) in a bowl altogether. Be careful not to overmix.
Once mixed add blueberries and gently stir 4-5 times.
Place into cupcake cases and bake for exactly 30 minutes.
