Easy Vegan Blueberry Muffins

This recipe is rediculously easy to make and can be easily made in a hurry for a delicious treat and snack to take to work.



Preparation Time: 5 minutes
Cooking Time: 30 minutes
Makes: 12 cupcakes

Ingredients

2 cups All Purpose flour (self raising wholemeal)
1/2 cup caster sugar (brown caster sugar) - optional for sweetness
3 teaspoons baking powder
1 cup of rice milk
1/2 cup applesauce (can use coconut milk)
1 cup blueberries

Method

Pre-heat oven 180 degrees.

Mix all ingredients (minus blueberries) in a bowl altogether. Be careful not to overmix.

Once mixed add blueberries and gently stir 4-5 times.

Place into cupcake cases and bake for exactly 30 minutes.
