Easy Watermelon and Haloumi Salad

Now that summer is getting nearer, the weather has heated up, it is time to think about refreshing salads.

Watermelon and haloumi sounds like a strange combination however it is actually a delicious one! Made in just minutes, it is sweet, and salty.

Preparation Time: 10 minutes
Cooking Time: 10 minutes
Serves: 1

Ingredients
About 4 - 6 slices Haloumi cheese
About 3 - 4 slices watermelon
Mint
Olive oil
red onion, chopped fine

Method
Chop the watermelon as per the photo, and add some chopped mint. Also add the onion - I only added a very tiny bit of onion, however you can use however much you like in this recipe.

Meanwhile put a small bit of oil in a small pan on a fair high heat, and cook the Haloumi till it is brown on both sides. This should take no more than 10 minutes.

I cut the cooked Haloumi in half and added it to the watermelon mixture.

Then add about a tbsp of olive oil and mix well.

Serve as a light lunch or as an accompaniment to a meal.

Simple but delicious!
