Preparation Time: 20 minutes
Baking Time: 3 minutes in microwave OR 30 minutes in conventional oven
Ingredients 1 cup all purpose flour
3/4 cup sugar (you may reduce this for less sweet version)
1/2 cup roasted semolina
1 tsp vanilla essence
A pinch salt
1/3 cup unsalted butter (at room temperature) or ghee
1 cup milk
1 tsp baking powder
1 tsp baking soda
Assorted nuts and dry fruits, chopped
In a bowl take semolina and add milk. Keep aside for 10 min.
In another bowl, sift all dry ingredients together. The flour, baking powder, baking soda, sugar. Combine well.
Keep the oven for preheating on 180 deg C
Add the dry ingredient mixture to the semolina. Mix well. Add the vanilla essence and butter.
You may want to add some milk to adjust the consistency of the batter. Add just a tablespoon at a time to get a smooth dropping consistency.
Add dry fruits and nuts. I added chopped dates, almonds, raisins and currants. You may add cashews, walnuts too.
Pour in a greased baking tray and bake at 180 deg for 30 min. I used a silicone baking dish, so greasing was not needed and baked in a microwave, micro at 80% power for 2 and half min.
Let it stand for 10 min before you invert it. Enjoy with tea or pack it for your kid's tiffin box.
