Eggs Benedict with Smoked Salmon

Delicious Eggs Benedict with Smoked Salmon


Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes: 2 servings

Ingredients
150g butter
2 egg yolks
1 tablespoon of lemon juice
Salt and pepper
4 eggs
2 English muffins
Continental parsley
2 slices of smoked salmon

Method
Step 1
To make hollandaise sauce, slowly melt butter in a saucepan.

Step 2
Put yolks in a medium bowl, add lemon juice and salt and pepper. Whisk until combined. Gradually add melted butter and continue whisking until the sauce is quite thick. Set aside.

Step 3
Bring 3-4cm of water to boil in a frying pan or a pot and poach eggs until just cooked. Remove with a spoon and pat eggs lightly with absorbent paper to dry.

Step 4
Toast two muffins then place two halves on each plate and top with parsley, smoked salmon, poached eggs and warm hollandaise sauce. Season and serve
