Egyptian Rubbed Chicken

This is a fall-off-the-bone recipe. To achieve this, you must have patience. So tender-it-melt kind of dishes don't happen in 30 minutes, they take time, so allow this to cook and work its magic in the oven, trust me, you will thank me for it.

Preparation Time: 5 minutes
Cooking Time: 2 hours
Makes: 3 servings

Tblsp za'tar seasoning
1 medium-sized orange chilli
3 chicken legs
2 onions
2 garlic cloves
Handful fresh parsley
1 lemon
2 cavolo nero leaves

Required ingredients

Chop the onions, chilli and crush the garlic.

Place the onions and chilli at the bottom of a pyrex dish (so they cook in the fat and don't burn), top with the chicken and season with the herbs and spices.

Place in the oven for 2 hours at 160 degrees/gas mark 3.

With 10 minutes to go, chop the cavolo nero.

Wash it thoroughly in a sieve.

Remove the chicken from the oven.

Either serve the legs whole, or you can pull the meat from the bones and serve as pulled chicken.

Serve with the greens and enjoy.
