Everything Green Salad

Using a base of broccoli and avocado, you can add in an abundance of other vegetables to make up this simple, delicious salad. There's only one rule - everything must be green.



Broccoli, avocado, cucumber, shallot and caper salad


The creaminess of the avocado and the tartness of the lemon and vinegar pair really well in this salad atop a mix of greens. In this version, I added cucumber, shallots and capers. Snow peas, baby spinach, rocket, roasted brussels sprouts and green capsicum also make great additions.

Of course, you can add any ingredients you wish, but I find there's something heartening about having a bold green salad for lunch.

Preparation Time: 10 minutes
Cooking Time: 2 minutes
Makes: 2 servings

Ingredients
1 head broccoli
1 avocado
Anything green

Dressing
Juice of 1 lemon
2 tbsp apple cider vinegar
Handful basil/coriander/parsley, fresh or dried
Pinch rock salt
Pinch pepper

Method
Put some water onto boil in an electric kettle. Roughly chop up the broccoli into small florets and place in a large bowl.

Pour over the boiling water and leave to sit for about 30 seconds to 2 minutes, depending on how crunchy you like your broccoli. Drain and return the florets to the bowl.

Slice the avocado and add to the bowl. Chop up the other ingredients, such as cucumber, shallots, herbs, into small chunks.

Add all ingredients to the mixing bowl, pour over the lemon juice and vinegar and stir well.
Serve straightaway or pack up for lunches throughout the week. It keeps well in the fridge for a day or two without becoming too soggy.
