Using a base of broccoli and avocado, you can add in an abundance of other vegetables to make up this simple, delicious salad. There's only one rule - everything must be green.
The creaminess of the avocado and the tartness of the lemon and vinegar pair really well in this salad atop a mix of greens. In this version, I added cucumber, shallots and capers. Snow peas, baby spinach, rocket, roasted brussels sprouts and green capsicum also make great additions.
Of course, you can add any ingredients you wish, but I find there's something heartening about having a bold green salad for lunch.
