Ingredients 6 slices of bread
Half an onion
Pinch of salt
South Asian cooking spices (such as a pinch of cumin, chilli flakes, fenugreek, garam masala, chilli powder, pomegranate seeds)
Crushed dried curry leaves
Cut the slices of bread diagonally and put aside.
Whisk the eggs in a shallow bowl.
Slice the onions and add them to the whisked eggs, along with the salt, South Asian spices and crushed dried curry leaves.
Heat about 8 tablespoons of oil in a non-stick frying pan.
Dip the bread slices into the egg mixture and shallow fry on medium-high heat.
Cook until golden brown on both sides.
