Extra Crunchy Coleslaw

Summer coleslaw is one of my favourites salads, and wth the addition of the fried noodles and almonds I love it even more now. Hope you will love it too.



Coleslaw ready to serve
Extra Crunchy Coleslaw


Preparation Time: 5 minutes
Cooking Time: 0 minutes
Makes: 4 side serves

Ingredients
For the Dressing
3/4 cup of whole egg mayonnaise
1 tablespoon of Dijon mustard
1 tablespoon of apple cider vinegar
1 tablespoon of lemon juice
1 teaspoon of sugar
Pinch of salt

For the Salad
1 packet of Chans original fried noodles
3 cups of shredded red cabbage
3 cups of shredded green cabbage
1 large carrot grated
1/2 cup of almonds

Method
Finely shred the cabbage place in a mixing bowl.
Grate carrot and add to the cabbage.
In a small bowl add mayonnaise, mustard, vinegar, lemon juice, sugar and salt and mix well.
Pour dressing into mixing bowl and mix well.



Coleslaw ready to serve

Roughly chop almonds and set aside.
The noodles are of the extra crunch. Add these in just before serving. Stir though and place into a serving bowl.
Place almonds on top and serve.
