Ingredients 1.5 sheets of puff pastry
1 cup of bacon pieces
1/2 cup of cream
1/2 cup of milk
1/2 cup of spring onions, chopped
1/2 cup of grated tasty cheese
1/2 tsp garlic, crushed
pepper & salt
Preheat the oven to 180 degrees.
Grease a baking dish and line it with your pastry. Make sure there is some overhang as the pastry will shrink.
Using baking weights or pasta, weigh down the centre and blind bake for 20 minutes.
While the pastry is cooking, sauté the bacon pieces in a small pan. Put aside to cool.
While the bacon is cooling, collect your ingredients to make the filling.
Whisk the 6 eggs, cream, milk, garlic and salt and pepper.
Once they are combined, stir in the spring onions, cheese and bacon.
When the pastry has been removed from the oven, take out the baking weights.
Pour in the filling and sprinkle a little extra cheese on top.
Thinly slice the tomato and lay it on top.
Return the quiche to the oven and bake it for about 40 minutes or until golden brown and set.
