Fast Cinnamon Rolls

These cinnamon rolls are so quick and easy to make. This recipe is eggless but greek yogurt makes the dough to turn out moist enough. They're relatively healthier too, with smaller amount of butter than traditional cinnamon rolls.

Makes: 8 servings


2 1/3 cups plain flour
2 tsp baking powder
1/4 tsp baking soda
1 1/3 cups greek yogurt (i used plain chobani 0%)
1/3 cup sugar
1 1/2 tbsp melted butter
1 tsp vanilla extract

1 1/2 tbsp melted butter
2/3 cup brown sugar
1 1/2 tsp cinnamon

1/4 cup cream cheese
1/2 cup icing sugar
1/4 tsp vanilla extract

Heat the oven to 200C. Grease the sides and bottom of a 8 or 9″ baking pan with cooking spray.

Combine flour, baking powder, baking soda and sugar in a large bowl.

Add yogurt, melted butter and vanilla then beat using a mixer on low speed until the dough comes together (or you can do this in food processor).

Transfer dough onto a floured surface and knead it with floured hands a few times until smooth.

With a rolling pin, roll the dough into a 1215-inch rectangle.

Brush the dough with the melted butter, leaving a 1/2-inch border unbuttered around the edges.

In a medium bowl, combine brown sugar and cinnamon. Sprinkle over the buttered area of the dough and press gently into the surface.

Starting at a long edge, roll up the dough. Cut the roll into 8 equal pieces

Put in the prepared pan and bake for 20 minutes. Cool for 5 minutes then remove the rolls to a serving plate.

In a small bowl, mix the cream cheese, powdered sugar, and vanilla to make a smooth frosting.

Spread or drizzle onto warm rolls.
