Fat Cheesy Tuna and Caper Burger

Fat tuna, cheese burger

This burger is almost too big to get your mouth around!

I made it as a main meal and therefore made the patty larger than normal.

I added salads to make it healthier, and served with raw green peas, and extra lettuce.

Preparation Time: 20 minutes (plus 15 minutes in the fridge, optional)
Cooking Time: 10 minutes
Makes: 1 serving

1 95 g tin Tuna
1 spring onion
1 tbsp Capers
1 tbsp parsley, chopped
cup breadcrumbs
1 very small egg, lightly beaten
cup grated tasty cheese
1 tbsp olive oil

2 slices tasty cheese, or grated
1 roll, halved
A little mayonnaise
Bit of tomato sauce (optional)
cup mixed lettuce leaves
tomato, sliced

Combine the tuna, egg, breadcrumbs, spring onions, grated cheese, parsley and capers.

Mix all ingredients, and add salt & pepper.

Form into one very large patty or 2 smaller ones, and flatten.

If you have time, place the patty in the fridge for about 15 minutes.

Heat oil in a small frypan and cook the burger for about 3-4 minutes each side, or until golden.

Meanwhile, cut roll in half and melt cheese slices or grated cheese under griller.

Spread tomato sauce and mayo on other side of burger.

Add the tuna burger, lettuce, tomato

You could also now put a slice of cheese on the top of the roll and grill for a minute or two.

The patty was slightly larger than the roll, however this does not matter! It tasted delightful, and far healthier than a bought hamburger. If giving to children, you could omit the capers.
