Fattoush & Halloumi Salad

Fattoush is a Lebanese salad, usually made with vegetables and toasted pitta bread. I've mixed it up a little with fresh crunchy salad, wholegrain toasted pitta and made more filling with pan fried halloumi. It's great for lunch, a light meal or packed into a lunchbox as a change from a sandwich.

Preparation Time: 15 minutes
Cooking Time: 5 minutes
Makes: 2 servings

Ingredients
1 wholegrain pitta bread
1 small cucumber
12 cherry tomatoes
1/2 red pepper
1/2 yellow pepper
3 tbsp chopped fresh parsley
200g halloumi

Dressing
2 tbsp extra virgin olive oil
2 tbsp lemon juice
1/4 tsp ground cinnamon
Salt & pepper

Method
Slit open the pitta bread and toast on both sides until crunchy. Break into pieces and set aside.
Chop and slice the cucumber, tomatoes, peppers and herbs and mix together in a bowl.
Mix all the dressing ingredients together and then toss through the salad.
Cut the halloumi into chunks and pan fry until golden on the outside.
Mix through the toasted pitta bread just before you serve and then sprinkle the halloumi on top.
