Ingredients 1/2 cup tri-coloured quinoa
300g broccoli, cut into florets
2 oranges, peeled, quartered and sliced
1 tsp lemon juice
50 ml extra virgin olive oil
1 tsp honey
bunch parsley, roughly chopped
1 large fennel bulb, halved and thinly sliced
In a microwaveable bowl, place the broccoli florets and 2 tbsp water. Microwave on high for 3 minutes, or until just tender and deep green. Meanwhile, boil a saucepan of water and cook quinoa according to packet instructions (usually 10-15 mins on a simmer).
In a large serving bowl add the oranges, lemon juice, oil, honey and parsley, and mix to coat the oranges well. Toss the sliced fennel through.
Finally, transfer the broccoli and quinoa to the bowl and combine thoroughly. Serve as either a side dish to grilled or barbecued meat, or a light summery main.
