Fish Amok

For the uninitiated, an 'amok' is a mild yellow Cambodian curry that is absolutely divine! It can be done with chicken as well, so feel free to substitute if you desire.



Preparation Time: 5 minutes
Cooking Time: 25 minutes
Makes: 6 servings

Ingredients
1 kg firm white fish fillets
2 tsp coconut oil
2 x 400ml cans light coconut milk
2 red capsicum, cut into fine strips
1 tbsp fish sauce
1 bunch coriander, roughly chopped

Amok Paste
40g lemongrass, finely chopped
2 tsp garlic, crushed
2 kaffir lime leaves
1 tsp ginger, grated
1/2 tsp turmeric powder
1/4 tsp palm sugar
3 spring onions, finely chopped

Method
In a food processor or blender, blitz the amok paste ingredients together until a smooth mixture has formed.
Over a medium flame, heat the coconut oil and paste mixture in a large pot for 30 seconds. Add the coconut milk and bring to a simmer for 10 minutes.

Meanwhile, cut the fish into small cubed pieces.

Transfer the fish and capsicum into the pot and gently poach until the fish is flaky and just cooked through.

Stir through the fish sauce, and then remove from the heat.

Serve on a bed of steamed rice and sprinkled with the chopped coriander.
