Flambeed Bananas

Both refreshing and warming at the same time, these flambéed bananas are the equivalent of a grown-up banana split.

Preparation Time: 15 minutes
Cooking Time: 25 minutes
Makes: 3 servings

Ingredients
4 bananas
150g creme fraiche
150ml water
¼ tsp vanilla extract
1 tbsp honey
20g flaked almonds
100g dried apricots
1 tbsp lemon juice
2 tbsp dark rum
2 tbsp brandy

Method

Heat the apricots in a saucepan with water and lemon juice for ten minutes.

Puree the apricots in a food processor.

Toast the almonds under the grill for about a minute.



whip, whipped, creme fraiche


Whip the creme fraiche with honey and vanilla extract.

Stir in the almonds and then chill in the fridge.

Slice the bananas lengthways, then fry them in butter until golden.

Pour over the rum and brandy.

Stir in the apricot puree.

Take off the heat and put the banana mixture in a bowl.

Remove the creme fraiche from the fridge and pour over the bananas.
