Chocolate Fudge Cake
Indulgent chocolate fudge cake

Quick, indulgent and delicious fudge cake is the perfect dessert or comfort food. This cake is easy to prepare and uses cocoa or cacao instead of chocolate. I like to eat mine warm, with a scoop of ice cream and fresh strawberries.

Preparation Time: 10 minutes
Cooking Time: 35 minutes
Serves: 1 cake

190g butter (or nuttelex if lactose free)
3/4 cup cocoa or cacao
1 cup hazelnut or almond meal
6 eggs
1 1/4 cup packed brown sugar
1 tbsp vanilla essence
Icing sugar, to dust (optional)

Preheat the oven to 165 degrees. Grease or line a 24 cm cake tin with baking paper.
Melt the butter, vanilla essence and cocoa in a saucepan on low heat.

Beat the eggs and brown sugar until the mixture doubles in size.
Add the butter and cocoa mixture and hazelnut meal and gently fold to combine.

Pour the batter into the cake tin and bake for 30-35 minutes until set. Allow to fully cool in the cake tin.
Remove from the cake tin and dust with icing surged before serving.
